Description

Algoby-Carrageenan is a kind of high molecular weight polysaccharide, which is mainly extracted from Marine red algae. Due to its unique gelling ability, medium viscosity, stability and high transparency, it is widely used in the food industry as a gelling agent, suspension agent, thickener and emulsifier for the production of fine jellies, viscous confectionery, ice cream and processed meat.

Product Characteristic

● Solubility: insoluble in cold water, insoluble in organic solvents, easily soluble in hot water to form a translucent colloidal solution (dissolution rate increases in hot water above 70 ℃)

● Gelatibility: it can generate thermo reversible gel in the presence of potassium ion

● Thickening: when the concentration is low, it forms a low viscosity sol, which is close to Newtonian fluid. When the concentration is high, it forms a high viscosity sol, which is non-Newtonian fluid

● Synergism: produced with locust bean gum, konjac gum, xanthan gum and other colloids, It can improve the elasticity and water retention of gel

● Health value: carrageenan has the basic characteristics of soluble dietary fiber

kappa carrageenan is mainly prepared from red algae - Eucheuma, from ɑ(1-3)-D-galactose-4-sulfate and β(1-4)3,6-dehydration-D half Partial sulfate group composition of lactose.
